Kheer Recipe |Indian Rice Pudding|2020 :

Kheer is an Indian dessert that is cooked in every indian house. It is a dessert which can be cooked anytime. You do not need to wait for any festival to make and eat Kheer. Basically Kheer is a mixture of milk, rice and sugar that is full of flavours and aroma. It is also perfect for any occasion to make. Kheer is a very simple and authentic indian dessert.

In my home Kheer is made by my mother the every other day which contains the goodness of milk, rice, sugar and dry fruits. But you can also make it with very basic ingredients like rice, sugar and milk which is easily available in every kitchen. No fancy ingredients are required to make kheer.
In this blog I will be sharing with you my mom's version of recipe of Kheer that is very simple yet eligent.
While making Kheer one question that arises is ----- which rice to use ?
Very important thing to consider is which rice to use to make that perfect kheer in which the rice beautifully combines with the milk and the other ingredients and enhances the flavour of each ingredient. 
I have seen a lot of people who use basmati rice for making kheer. No doubt it is the best aromatic rice. But we also need to see what kind of dish we are making. Basmati rice is mainly known for their long grains and it is mainly used in dishes such as biryani, pulaw etc where every grain is seperated from each other unlike kheer. KHEER is the dish where nothing is seperated , every ingredient hugs each other to make it the most flavoursome dish. So Basmati rice should not be used for making kheer. But if you want to use it then it is your choice.
If you will ask me I will recommend you guys that medium sized grain rice which is not too thick and not too thin, perfect for making kheer.

KHEER , Not only tasty but healthy at the same time. 
Rice --- White rice is a good source of energy, carbohydrates, calcium, iron, thiamin, pantothenic acid, folate and vitamin E.
Milk --- Milk is a good source of Potassium and Vitamin D.Vitamin D helps in maintaining proper levels of calcium and phosphorus in the body, which helps in building our bones strong.

Sugar --- Sugar  provides an Immediate Burst of Energy. Sugar Helps You Store Energy for Later. 

Dry Fruits --- Dry fruits are a great source of proteins, vitamins, minerals, dietary fibre, and an ideal substitute for high-calorie snacks.


So we have seen all the goodness of kheer. Now let's start with the recipe.
The Ingredients ---
( For 4-5 people )
Rice  -  100 grams (soaked it for 20-30min.)
Milk - 1 litre of whole milk ( if it is extra creamy than 750 ml of milk and 250 ml of water)
Sugar - 100 grams ( equal amt. of rice)
Dry fruits - cashew , almond , pistachio , raisins , dried coconut and Cuddapah almond (chironji).
Green cardamom --- 4-5 (crushed)
Now let me tell you that it is not necessary to add all of these dry fruits. You can add whatever you have. But What I actually recommend you is to put cashew, almond , dried coconut and chironji. 
Kesher --- pinch of kesher (optional) 
(Even if you do not put kesher , it will turn out be equally good.)
Process of making kheer ----
1- Rinse the rice until water turns clear. Then soak the rice in enough water for 20 to 25 minutes. After 20 - 25 minutes, drain the rice and set aside.
2- Now take a heavy bottom pot heat it on the gas then pour milk into the pot. Let it come to a boil. Lower the flame to medium.
3- Now add the rice to it and stir it well , the very momemt put the crushed cardamom in the pot and now you need to keep stiring it so that it may not burn.
4 - Now allow this to cook for 15 - 20 mins. or till the rice becomes soft at low to medium flame and do not forget to stir it in every 1 or 2 mins. 
5 - When the rice is almost cooked and the milk becomes creamy add the dry fruits to it. And let it cooked for 3 - 4 mins.
6 - Now the final step is to add the sugar and kesher to it. Now after adding sugar stir the kheer well and switch off the flame. The sugar will desolve itself because of the heat.
7 - Now your most delicious mouth watering Kheer aka Rice  pudding is  ready to serve.
So these were the steps of making Kheer. You can also customised it as per your taste. 
Here in my opinion I will suggest you to put it in the freeze and let it chilled and then eat it. Even if you do not want to put it into the freeze you can allow it to get chilled at room tempreture for 3 - 4 hours and then eat it.And it will taste like magic.
